On New Year’s Eve, my father and my uncle talked about their work toger. My mum did some cooking with my aunt Grandparents and I watched the New Year TV programmes. At about six o’clock, we had a special family dinner. We all thought the dumplings were delicious.

日前,由饭店协会主办的首届名厨大会在天津举行,在会上评出的首批“十大名厨”,大连新海味林波榜上有名。与他共同入选“十大名厨”的是来自、上海、、成都、杭州、温州等各地的餐饮行业领物,在这十位餐饮的身上,可以感受到当代餐饮业发展潮流与趋势。
在本次大会当中,当选的十大名厨要在来自全国各地的厨师面前展示厨艺,并且要通过PPT等形式讲解所做菜品的烹饪原理、制作要点和营养搭配等内容。“通过这种方式,可以更方便地展示很多技术细节,与同行进行更好的交流。”林波说,他觉得这对厨师的综合能力提出了更高的要求,“按现在的标准衡量,一位的厨师不但要把菜做好,更要能讲出其中的理论依据,并且能够运用电脑等技术手段完整地表达出来。”
林波在本次大会上展示的是如何用活海参烹制出精美菜品。此前,厨师们通常选用水发海参作为海参菜的原料,但随着运输与储藏手段的提高,使得采用活海参做原料成为可能,“与水发相比,活海参营养流失更少,口味也更鲜美。”林波说。但因活海参比较脆,因此在刀工、火候、调味等方面有很多独特的诀窍,这正是林波通过不断研究所领悟到的,并在本届大会上带给同行的创新理念。
